Savoy cabbage is a very good source of vitamin C which protects skin integrity, heals wounds, protects cells from premature ageing due to free radicals, and enhances immune system activity. Savoy varieties are milder-flavored than regular green cabbage, but the two can be used interchangeably in recipes.
1 T sesame seeds
½ cup thinly sliced green onions
4 cups thinly sliced savoy cabbage (about ½ head)
3 T rice vinegar
2 T grapeseed oil or peanut oil
1 T peeled fresh ginger, minced
1 teas. sugar
1 T oriental sesame oil
salt & pepper
Stir sesame seeds in dry skillet over medium heat until golden. Combine cabbage & onion in a bowl. Combine remaining ingredients, then add to cabbage mixture. Toss. Cover & refrigerate. Toss before serving, sprinkle with seeds. Serves 4.
