Risqué Rosé
ROASTED MUSHROOM SOUP
Prepared with Laurentide Pinot Noir Rosé!
~Falling in love is like eating mushrooms, 
you never know if it's the real thing until it's too late.~

8 oz Button Mushrooms sliced 
• 8 oz mini Bella Mushrooms sliced
• 1 Onion sliced
• ~ 3 Garlic Cloves peeled
• Truffle Oil or EVOO
• S&P
• 1/2 c Pinot Noir Rosé 2019
• 2 c Beef Broth 
• ~1 T Sweet Paprika
Preheat oven to 425
Season 1st 4 ingredients with S & P, toss with ample oil.
Roast vegetables on parchment covered sheet at 425 for ~30 minutes. (Roasting brings out deep and concentrated flavors.)
Remove and then sauté  in medium saucepan with more oil and Laurentide wine. Reduce slightly.
Add stock, paprika and simmer 10 minutes.
Purée as desired. Taste, adjust seasoning. Add water to thin if necessary.
Enjoy with Laurentide Pinot Noir Rosé and crusty French bread for an earthy, hearty fall meal or include a cup in your  holiday soup course, of course!  Serves 4-6
